When Irish Eyes Are Smilin’

Hello there! Hope you had a lucky St. Patrick’s Day. This was supposed to post on March 17th - a little late. St. Patrick, from the 5th Century, is a patron saint of Ireland. He was born in Great Britain, captured by pirates at the age of 16, and was sold into slavery in Ireland. Eventually he escaped, returned to Great Britain, and was ordained a Bishop. He returned to Ireland as a missionary. He is known for his ability to have an impact on the literacy, spirituality, and dignity of the people of Ireland.

I’d like to share a family small cheesecake recipe (with added crust) that we always make for St. Patrick’s Day. You could make them anytime and just change the color up or be creative and test different flavors. Check out the recipe in the Creative Fun

Hope you enjoy making it and eating it!

Finally, I’d like to leave you with an Irish prayer / blessing:

May the road rise to meet you. May the wind be always at your back. May the sun shine warm upon your face. May the rain fall soft upon your fields. And, until we meet again, may God hold you in the palm of his hand.
